This American flag cake has three simple steps: bake, frost and decorate! You’ll need blueberries for the star section, but the red stripes can be made with strawberries or raspberries, or both, depending on what looks fresh and juicy at the market. Berries, despite their tiny size, are one of nature’s richest sources of antioxidants, which deliver benefits like improved immunity, better energy and increased fat loss.

For the sheet cake, you won’t need any fancy tools. Just a 9” by 13” baking pan. Read on for the recipe and easy variations:

Patriotic American Flag Cake

Ingredients:

3 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

4 eggs

1½ cups sugar

2 tsp. vanilla extract

¾ cup vegetable oil

1 cup milk

1 can store-bought vanilla frosting

1 container fresh blueberries

1 container fresh strawberries or raspberries

Instructions:

  1. Heat the oven to 350°F. Grease a 9” by 13” baking pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda and salt. In another bowl, whisk the eggs, sugar, vanilla and vegetable oil until combined. Add some of the dry ingredients to the wet, then some of the milk, and mix to combine. Continue alternating until batter is smooth.
  3. Pour the batter into the pan and smooth out the top with a rubber spatula. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely in the pan on a wire rack.
  4. If you’re using strawberries, cut off the crowns and slice the strawberries in half while the cake is cooling. When cake is cool, spread with the frosting. In the top left corner of the cake, place blueberries in a 6- by 6-berry square, then use the strawberries and/or raspberries to make horizontal stripes covering the remainder of the cake. Cover with plastic wrap and chill until ready to serve.

Short on time? Opt for a boxed white cake mix instead.

Prefer chocolate? Replace ¾ cup of the flour in the above recipe with cocoa powder.

Going gluten-free? You can still enjoy this patriotic dessert! Simply replace the flour with an all-purpose gluten-free flour, like King Arthur.
